Mashed "Potatoes"

1 head of cauliflower cooked in a pot of water for about 15 minutes until very soft.
Drain the cauliflower and mash with a potato masher.
Sprinkle with garlic powder, pepper, sea salt, various other herbs of choice, and place in food processor. Add a few drops of creamer (phase 2 - 4) chicken broth can be used in phase 1, and a few squirts of spray butter (the fake stuff) and process in the food processor or on puree setting in the blender until it looks like mashed potatoes.
This can be kept in a container in the refrigerator for a week. I put a large spoonful on my plate and heat it in the microwave before adding the rest of my meal to the plate. It saves time and gives a vegetable serving to the meal.
