Cauliflower-Leek Purée

Serves 3 - 4
Prep Time: 10 minutes before + 15 minutes after cooking
Cook Time: 15 minutes

Ingredients:

1 head cauliflower, separated into florets
1 leek, white and 1" green in ½" slices
4 T olive oil
salt
pepper
¼ t nutmeg
garlic, optional

Directions:

Trim cauliflower into florets.
Wash leek well and cut into ½" slices.
Cook cauliflower and leek in boiling, salted water until very tender, about 15 minutes.
Drain and return vegetables to pot.
Toss over medium/high heat to thoroughly remove excess moisture.
Place half the vegetables in food processor with about half the olive oil.
Process until smooth.
Repeat with remaining vegetables.
Mix halves together in microwave safe bowl with salt, pepper, and nutmeg.
Heat in microwave to get good and hot, about 2 minutes on 50%.
This recipe really does taste like mashed potatoes. The grassy onion flavor of the leek seems to balance the sweet taste of the cauliflower.
You might add some garlic for the taste of garlic-mashed potatoes.
